Hand forged Yanagi (Japanese Sushi and Sashimi Knife) is made for those close cuts that make the perfect sushi and sashimi. It features a blade forged high carbon steel with a chisel grind to allow the knife to slide along the bones without digging in. The handle is available in several wood types as well as stacked leather and is polished to compliment the mirrored blade perfectly and allows for a comfortable grip during use.Each knife is hand forged individually for the customer. Knives may vary slightly in appearance due to the custom nature of smithing.
