On Pesach, we have many exciting, long-standing traditions that we observe, including conducting the seder & eating different ritual foods, one of which is matza (unleavened bread). We have the tradition to eat the matzah because when the Jewish people were exiled out of Egypt, they didn't even have enough time to bake bread for their journey. The mere 18 minutes that they had available to them only allowed them to bake matzah. in commemoration of the hardships that our ancestors experienced all those years ago, we now eat matzah for the 8 days of Pesach.
