The Rutabaga or "Swede" as the British call it, is actually a cross between a turnip & cabbage. The flavor is sweet & mellow. Purple Top Rutabagas are a cream color with purple shoulders, although will turn golden as they are cooked. Each Rutabaga can grow up to 6 inches long. Rutabaga can be steamed or boiled, then mashed in place of potatoes, pureed to make creamy soups, or cut into chunks & used in stews, hashes, or even stuffed. Rutabagas can be growing in early spring for a summer harvest, & again in the summer for a fall harvest. It's said the flesh is sweeter when grown in the fall due to the cooler weather.
