Siam Queen Thai Basil has tender, intensely clove/licorice flavored leaves that are a favorite in Thai & Vietnamese cuisine, especially in Vietnamese pho. Yields are impressive with, 3" to 4" long by 1 ½" to 2" wide. Known in Thailand as "Horapha", & is known to the Vietnamese as "Hung Que" Perfect variety for containers, & a beautiful addition to flower gardens. ~ planting ~ When to sow outside: RECOmmENDED. 1 to 2 weeks after average last frost, & when temperatures are warm. Basil is very sensitive to frost. When to start inside: 6 to 8 weeks before planting outside. Special sowing instructions: Easy to grow from seed. Must have warm temperatures; wait to plant until nighttime temperatures are above 50o F. ~ growing ~ Basil thrives in soil that drains well, yet needs water often. If the weather drops below 50 degrees, provide protection. As the plant grows, pruning it helps it to develop into a bushy, healthy plant; pruning is also important because once the plant flowers, it will begin to wilt & die. To prune the plant, remove the top several sets of leaves on each stem, taking care to leave at least three sets of leaves on the lower part. ~ harvesting ~ Basil should be harvested before the plant flowers. The leaves have more flavor when harvested in the morning. The young, top leaves taste the best, & should be used fresh. When harvesting, pinch off the stem directly above the next set of leaves. Fresh basil will keep for several days at room temperature, with the stems in a glass of water; if refrigerated, it tends to wilt & turn brown. Basil also freezes & dries well. Since the water content of basil is very high & it can mold easily, the best method for drying is a dehydrator, an oven, or a similar dry, warm location. Cut a few stems but never more than 1/3 of the plant. Wash stems, gently shake dry, & strip the leaves off the stem. If there is any chance of temperature dropping to 32o F, harvest crop immediately; basil is very frost sensitive.
