Traditionally this was hung over the fire with the idea that you could roast multiple morsels at a time or hang a larger piece. Old recipes during the days of George Washington typically had the roast stuffed with herbs & spices, banded with twine & the drippings were collected when possible to baste the meat. forged from a single piece of steel.
