Standard size for large pearl tapioca #40 is between 4.0 - 4.7 mm.They come in the form of round pellets made from cassava roots and are most commonly used to make tapioca pudding.Before adding to these pearls to a recipe they must be soaked for at least 2 hours. For a richer taste, soak in vanilla bean milk or cream overnight in the refrigerator..Store in a cool, dry place.
