Xanthan Gum Powder is used in cooking as a natural thickener, and as a stabilizer and emulsifier. Xanthan Gum is a soluble fiber sourced from Xanthomonas campestris . It is a high molecular weight polysaccharide gum. When used in baking, Xanthan Gum provides around 5 percent CO2, a rising agent. In general, use from 1/2 - 1 teaspoons per cup of flour. As a liquid thickener, use one half percent of the total liquid weight.
