This collection was curated especially for The San Francisco Professional Food Society which is a forum for Bay Area food professionals and enthusiasts to come together for networking, learning, idea-sharing, and connecting. This collection includes stars in the American cheese world that are the perfect for a wine and cheese tasting event. Collection includes: Brebis Cheese by Blackberry Farm: Brebis is a fresh, buttery sheep’s milk cheese, only a few days old, produced in the same way as a fresh chèvre. It is rich and creamy, while being light on the tongue. Sprinkle Brebis into your favorite salad or frittata, serve with fresh strawberries or spread on crostini with a roasted red pepper spread and fresh cucumber. The Brebis is delicious slathered on crackers with a drizzling of extra virgin olive oil alongside slices of your favorite charcuterie. It wasn’t until Chris Osborne was old enough to work his first job in a restaurant kitchen that he experienced natural and organic foods for the first time. He quickly became passionate about quality and taste, gaining a new appreciation for farmers and small producers. His path eventually led him to Blackberry Farm in 2015, where he assumed responsibility for cheese production on the farm. Blackberry Farm is part of a 4,200-acre estate in Walland, Tennessee, a location situated in the foothills of the Smoky Mountains of eastern Tennessee. In addition to artisan cheese, Blackberry Farm grows and supplies sustainably-driven heirloom produce, honey and eggs to the on-site hotel and restaurant. Chris’ passion for quality, farm-fresh products has influenced his craft, influencing him to discover the nuanced flavor differences of our cheese from batch to batch—the result of a process led by the seasons. This 2020 Good Food Award Winner is small-batch, seasonal and so good! (8 oz.) Little Hosmer by Jasper Hill: Jasper Hill Farm's Little Hosmer is an approachable and nuanced soft ripened cheese. Beneath its thin, bloomy-rind lies a gooey, milky core showing a complex array of flavors at peak ripeness: cauliflower, crème fraiche, and toasted nuts. A bright, clean finish with a hint of white mushroom aroma follows the rich flavors of the paste. Little Hosmer is a Jasper Hill Creamery original, it is their mini version of a new world-style brie. This cheese is named for a small pond in Craftsbury, Vermont. Little Hosmer Pond is adjacent to Great Hosmer Pond, both favorite Jasper Hill destinations for rowing, swimming, fishing and cross-country skiing after a long day of cheesemaking. Naming this little cheese after a Northeast Kingdom gem ties out Jasper Hill Farm's quest for meaningful work in a place that they love. (4 oz.) Tumbleweed by 5 Spoke Creamery: Tumbleweed is a cross between the classic French cheese Cantal by Le Salers and aged Cheddar. This semi-hard cheese shows its true form after eight to nine months in the caves of 5 Spoke Creamery. While other cheeses promise the trademark Cantal flavor - Tumbleweed actually delivers. It's delicately fruity, with that unique curdy texture. The finish pulls in cheddar-like creaminess and brothy, brown butter aromas. Great cheese starts with great milk. At 5 Spoke Creamery (based in Goshen, N.Y) all of their cheeses are hand made in the farmstead tradition (produced on site with a closed herd) from the raw milk of grass-fed cows. Their milk comes from Holstein cows that are free of hormones. Raw milk from a grass-fed cow has a depth of flavor-or terroir-that cannot be duplicated. 5 Spoke Creamery's raw milk cheeses offer numerous health benefits. Their raw milk cheeses, all aged a minimum of 60 days, promote easier digestion and better calcium absorption; contribute to a stronger immune system; aid in combating allergies; are high in conjugated linoleic acid - the most potent cancer fighter and contain a perfect balance of omega-3 and omega-6 fatty acids. Glacier Blue by Cascadia Creamery : Cascadia Creamery describes this raw cow's milk cheese as their "Gateway Blue," a cheese that is sure to win over those who thought they didn't like blue cheese. Made with raw cow's milk, its texture is dense and fudgy with flavors that range from tangy buttermilk to roasted nuts, cocoa nibs and beef. (7.5 oz.)
