We love this small batch, sustainably harvested Beekman 1802 Hickory Syrup! The taste is amazing, but it has caused a Saturday morning conundrum... Do we go with maple or hickory syrup on our pancakes? What's Hickory Syrup? Well, historically it's known as "All Season Syrup" since farmers made it during the months when Maple sap wasn't flowing. Unlike Maple Syrup (which is made from sap,) Hickory Syrup is made from the bark. Beekman's artisans sustainably harvest Shag Hickory bark, clean it, roast it, and use it to brew a condensed "tea." Then pure turbinado is added during the cooking process. The result is an amazingly complex, spicy & earthy syrup with amazing depth...which isn't just for pancakes and waffles. Try it on sweet potatoes. Or in baked goods. Or as a glaze for pork or chicken.
