Shun Reserve knives feature a SG2 steel core that is incredibly hard & dense. The SG2 steel also offers unmatched edge retention for an unparalleled length of time. The 32-layered Damascus ladder design is made of nickel/stainless steel. Each Shun knife provides a Japanese blade angle of 16 degrees. You will enjoy the ease of cutting the thinnest slices without bruising or tearing the most delicate foods while prepping; this ensures the ingredients to stay intact, retain flavor, and stay fresh.
