    Wusthof classic cook knife: the real thing

    Pros: ease of use, weight, solid construction, ease of maintaining edge

    Cons: cost?

    We had used a French Chef knife for decades, I thought it was "the best." Then my wife gave me the Wusthof 4582 20 cm Classic Cook's Knife several years ago. It is now THE favored knife in our kitchen. Half of cooking seems to be choppi...ng, at which this knife is superb. At first I thought I would not like its heft, but in fact it is an asset. It fits the hand well. The back of the blade is slightly rounded so no sharp edges when you press down on the blade. It takes an edge very well. It works for small as well as large jobs. Skinflint that I am, I at first questioned the price, but this is a tool that should last a lifetime, so the per annum cost is low.And remember: respect your knives. Clean and put them away in a block immediately after each use. No drawer storage, no soaking in dish water, no dishwasher no prying. Maintain and protect the edge.
