Pros: nice slick bonded surface, good weight & handels
Cons: not good for saute, hi-heat searing, caramelization
I'm a chef and I love my non stick skillet for lo-heat cooking like eggs, pancakes, grilled cheese etc.
For saute I don't reccomend it as the coating acts an insulater against hi-heat, the coating is micrscopicly uneven so all foods don't rest on a flat surface which makes sauteing difficult because you'll have a hard time trying caramelize vegetables for soups and stocks. If you don't use enough fat when pan frying your foods will receive uneven heat unless the food is constantly moved. I was given a non-stick wok (a waste of money), You want a wok to adhere to the food so you can move ingredients up the cooler sides while you cook at a higher heat in the "well", then draw all ingredients back together.
